This is simply the best cinnamon coffee cake recipe ever. This moist, vanilla-scented cake has a sweet ribbon of cinnamon running through it, and it’s topped with a crisp streusel topping. Drizzle a little vanilla glaze over the top for extra decadence.

🍰 Ingredients:

Instant Coffee 2 teaspoons
Cinnamon powder 1 teaspoon
Melted Butter 50g (3 ½ tablespoons)
Plain flour 2 tablespoons
Dark brown sugar 75g (about 4 tablespoons)
Chopped Walnuts 50g (¼ cup)

For the cake:
Butter 150g (⅔ cup)
Sugar 150g (¾ cup)
3 Eggs (medium size)
Plain flour 180g (1 cup, 3 tablespoons)
Baking powder 1 teaspoon
Vanilla extract 1 teaspoon
Almond essence (optional) ½ teaspoon

Coffee Icing drip:
Powdered sugar 50g (¼ cup)
Instant Coffee 1 teaspoon
Milk 1-2 tablespoons

Measuring cup size – 240ml
Baking pan 20×20 cm

Bake in a preheated Oven at 170c (338f) for 30-35 minutes

This Great Depression-era chocolate cake recipe was developed when ingredients were scarce and money was tight. Sound familiar? Nicole tries this easy, no egg, no dairy cake recipe with great results. She even steps it up a notch with a no-dairy chocolate frosting. And what’s more, the cake can be mixed by hand in a single bowl–no stand mixer required.

Ingredients

Baking spray with flour
2 1/4 cups all-purpose flour
1 1/2 cups granulated sugar
1/4 cup cocoa
1 1/4 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
1 1/2 cups warm water
1/3 cup canola oil
1 teaspoon vanilla extract
Fresh berries (optional)
Powdered sugar, for dusting (optional)

FROSTING (OPTIONAL)
1 1/2 cups powdered sugar
1/4 cup cocoa
3 tablespoons water
1 teaspoon vanilla extract
Pinch of salt

How to Make It
Step 1
Preheat oven to 350°F. Spray a 9-inch cake pan with baking spray with flour, and line the bottom with parchment paper.

Step 2
Whisk together flour, sugar, cocoa, baking powder, baking soda, and salt in a large bowl until incorporated. Add water, oil, and vanilla, and whisk until well combined. Pour cake batter into prepared cake pan, and bake in preheated oven until a wooden toothpick inserted comes out clean, 30 to 32 minutes.

Step 3
Let cool on a wire rack until completely cooled, about 30 minutes. Invert onto a serving platter. If desired, top with berries and dust with powdered sugar.

Step 4
If using Frosting: Whisk together powdered sugar and cocoa powder until well combined. Whisk in water, vanilla, and salt, and mix until smooth. Spread icing over cooled cake.
